ed-ep07 is the unique ending from episode 07, where Vigne is counting on Wikipedia (has a plot summary for each episode)

which tells that the subtitlers were using this nyaa.si torrent (magnet) which says "... I took Horriblesubs ..." so clearly they started from horriblesubs (which is just a rip from official sources, in this case probably crunchyroll) but it's not just horriblesubs, because there's comments:

The episodes are encoded on the blu-rays as one continuous stream (per volume) of four episodes, with chapter markers. I split them on the I-frame closest to the chapter marker because this allows for a "perfect" remux and made the subtitles I already had line up exactly.
The vp9 videos were encoded with ffmpeg two-pass with the following options:
-c:v libvpx-vp9 to select the vp9 codec
-c:a libopus to select the opus codec for audio. I didn't use any other options to adjust audio, it's all default
-crf 20 for 1080p, -crf 35 for 720p. This sets the "perceptual quality" that libvpx targets
-deadline best https://trac.ffmpeg.org/wiki/Encode/VP9#DeadlineQuality
-filter:v except for 1080p mkv. The filters were:
scale=-1:720 only for 720psubtitles=filename=EPISODE_SPECIFIC_FILE.mkv:fontsdir=fonts for subtitle burn-in (webm only)The remuxes were much simpler:
-c:v copy copy the video data, no transcode
-c:a flac technically a transcode, but lossless. Blu-rays use raw pcm for some reason??
